
DR. BACON MOOD ENHANCING FLAVOR MISSILES aka BACON WRAPPED JALAPENO POPPERS
These bacon-wrapped cheesy flavor missiles can be prepared in a variety of ways resulting in happy friends and family. Dr. Bacon has meticulously prepared thousands of jalapeno poppers using both options and not a single complaint. Ok, one complaint. *We will share why below…
Dr. Bacon’s preferred method of cooking bacon wrapped jalapeno poppers is on a pellet smoker/ grill such as a Traeger Pellet Grill because the ingredients absorb all sorts of smoky goodness when on low smoking temperatures. **Experiment with your favorite pellet flavors and let us know your favorites.
Cooking in the oven is another great option due to the pleasing aromas of delicious bacon and melty cheese that will waft around your home. There is no essential oil on the market that can match it.
No matter what you call them or how you cook these tasty treats, we know you and your guests will enjoy. *Except maybe one or two people provided you choose to set up the game below.
Version One- Cooking Bacon Wrapped Jalapenos On A Smoker or Grill
Necessary Supplies and Instruments
- 2 lbs. of fresh green jalapenos
- 1.5 lbs. of thick cut bacon or 1.25 lbs. of regular bacon
- 1 lb. of shredded Mexican cheese blend
- Dr. Bacon O.G. Spice Rub
- Traeger Pellet Grill or similar
- Tongs
- Sharp paring knife to cut jalapenos
- Bowl or colander
- Cutting board
- Small spoon
- Toothpicks or grill pins may be need for thick cut bacon
- Sheet pan or plate
- Gloves - to reduce chance of temporary mild burning of hands
Official Procedure:
- Thoroughly wash the jalapenos in a colander or bowl
- Cut all jalapenos lengthwise to from tip to stem and set aside on cutting board
- Use spoon to scoop out jalapeno veins and seeds into a preferred location such as sink, composting pile, bowl for replanting, etc. *If you want to play the game, leave a few jalapenos with veins and seeds intact.
- Put the cheese blend into a bowl where easy to grab
- Set out baking sheet
- Slice bacon strips into halves on the cutting board
- Take hollowed out jalapeno and stuff generously with cheese blend.
- Wrap cheese stuffed jalapenos with bacon and place on baking sheet. (Regular cut bacon will easily wrap whereas thick cut bacon may need a toothpick or pin to keep in place)
- Repeat until all jalapenos are stuffed with cheese and wrapped in bacon.
- Apply coating of DR. BACON O.G. on top of bacon
- Set smoker to smoke feature or 180 degrees.
- Place each seasoned and stuffed pepper on the grill individually and cook for one hour at 180 degrees.
- Turn up heat to 225 degrees and cook for 90 minutes or to preferred firmness. Turn up temp to cook faster but monitor not to overcook.
- Remove poppers from grill with tongs and let cool on plate or sheet pan
- Enjoy with friends and family and expect them to go quickly. Maybe even set some aside for yourself.
++ Pro-tip: Add to other recipes such as atop hamburgers, chili or inside breakfast burritos.
*Play a game of jalapeno seed Russian roulette with your guests, provided they can handle the added heat. Leaving the veins and seeds intact will retain much of the jalapeno’s native heat and create an exhilarating experience for the (un)lucky ones.
